One of bourbon’s undiscovered gems, Walleye Run is meant to encapsulate the feelings of all things Michigan, with their inaugural bourbon release delivering a unique flavor profile at a proof point focused on drinkability.

Walleye Run is a sister brand to Dragon’s Milk, both of which fall under the growing New Holland Distilling Co. family. While the Dragon’s Milk brand has a specific mashbill and even more specific marketing angle, Walleye Run is meant to encapsulate the feeling of all things Michigan, New Holland’s home. It also captures a variety of whiskeys, from American single malt to malted rye and bourbon.

Walleye Run Bourbon Aged 5 Years is a unique tasting bourbon, which is apparent immediately. It shares similar citrusy notes with the distillery’s Dragon’s Milk Toasted Origin series, but dials the intensity back a notch while simultaneously amplifying the unique flavor profile the distillery is known for. Citrus, stone fruits, and apricot flavors are on display here, popping over a base of caramel, brown sugar, and pie crust. The nose is extremely vibrant, with fresh-cut oak cutting through waves of fruit, nougat, and caramel. The body of the bourbon is on point, and the finish is long.

New Holland Spirits is one of bourbon’s undiscovered gems, with a limited distribution and flavor profile unlike any other. Bottled under their quietly growing Walleye Run brand, this 5 year old bourbon nails a sweet spot the distillery has continued to hone in on. The bourbon combines unique flavor with a manageable proof point to deliver a whiskey that’s an easy recommendation at the price point for anyone looking to expand their range of flavor profiles in their collection.
