Lost Lantern’s Summer 2025 Collection “celebrates the rise of estate distilleries.” These types of distilleries grow all of their own grain either onsite or within a short distance to their distilling facilities. This helps give rise to the “grain to glass” movement within the whiskey industry and, like wine, seeks to highlight terroir, or a "sense of place" that the whiskey embodies.    

Whiskey Acres Distilling Co. is an estate distillery located in DeKalb, Illinois. The company bills itself as a seed-to-spirit distillery. It not only grows all of its grains but also uses water pulled from the limestone aquifer underneath its land. This is the first time that Lost Lantern has sourced from Whiskey Acres Distilling Co.

The bourbon delivers a classic sip that comes across as surprisingly spice-forward for a wheated bourbon. The nose delivers classic scents mixed with stewed apples and spiced raisins, while its proof is evident thanks to a hint of ethanol. Cinnamon and white peppercorn spice blend with raisin breads and charred oak at the midpoint. The whiskey ends on dry notes, which lead to a lingering dry heat. Lost Lantern Single Cask #7 is an interesting bourbon that highlights the region and grain of northern Illinois; however, it struggles to stand out compared to the other single casks featured in Lost Lantern’s Summer 2025 Collection.
