The latest release in Chattanooga Whiskey Co.’s Vintage Bottled in Bond series, the Spring 2021 batch introduces a new experimental mashbill to the blend that amplifies the bourbon’s chocolate notes and delivers a delicate yet flavorful experience.

Chattanooga’s Bottled in Bond series is a semi-annual release, with each highlighting one of the two distillation seasons - spring or fall. These vintages are crafted using a wide selection of unique mashbills and contain a high percentage of malted grains, which includes at least 25% specialty malted grains. Batch sizes are small, using only 10-12 barrels per batch, with the Spring 2021 Vintage being a two-batch release, totaling 10 barrels per batch.

Recent vintages have included a new mashbill, and the Spring 2021 release introduces SB078, which, in and of itself, exhibits flavors of chocolate malt and sweet smoke, according to the brand. Chattanooga tends to offer a chocolate note with a lot of their whiskeys; however, it is clearly amplified in this release, which starts at the onset of the palate and rides through the remainder of the sip. It’s a dry chocolate and combines with flavors of roasted malt, apple pastry, butterscotch, and honey on the palate. Toasted caramel, brown sugar, and tobacco mingle in the finish.

Chattanooga Whiskey Co. makes very flavorful whiskeys, and Bottled in Bond Vintage Series Spring 2021 is no exception. What is unique about this vintage, which Founding Distiller Grant McCracken points out and what is immediately apparent, is how light the sip is. This may seem contradictory to the fact that it’s flavorful, but strangely, it is both light and flavorful at the same time. This is probably better described as delicate because it still offers plenty of flavor depth; it just does so without any flavor overpowering another and maintaining balance, tempering any harshness, but doing so without coming across as watered down. At its price point, Chattanooga Whiskey Bottled in Bond Vintage Series Spring 2021 is definitely a bottle to pick up.
