Chattanooga Whiskey announces most limited Bottled in Bond blend to-date: Spring 2021 Vintage

Chattanooga, TN (May 2025) – Chattanooga Whiskey today announced the latest release in their Bottled in Bond  Vintage Series: Spring 2021. Barrelled from January 2021 through June 2021, this seasonally-inspired blend was  crafted to showcase the spring and summer flavors imparted by multiple bourbon mash bills – including a new  “roasted” mash bill known as “Barrel 78”. 

As with previous vintages, Spring 2021 was produced exclusively at Chattanooga Whiskey’s Riverfront Distillery  as an ongoing collaborative effort between the entire distilling team to create a new vintage for each six-month  distilling season. 

“Every six months, our team goes through our wide library of mash bills to decide which ones we want to produce  that season. While we love to make our core recipes like “Wheated” and “Roasted”, occasionally we'll decide to scale  up a promising new mash bill from our Experimental Distillery."

As with recent vintages, the Spring 2021 blend introduces a new mash bill to the BIB series, known as "SB078".  Named after the 78th barrel filled at the company's Experimental Distillery, this five-grain mash bill contains a  Belgian-made chocolate malted barley, a double roasted caramel malted barley, and a cherrywood smoked malted  barley. Used as 20% of the overall blend, this mash bill contributes subtle, flavor-enhancing notes of chocolate  malt and baked apple to the blend. ?

"’Barrel 78' is something of an anomaly when it comes to flavor. Alone, the mash bill has subtle notes of chocolate  malt, and even a hint of sweet smoke
but when blended into this spring/summer blend, it acts as a flavor boost to  the other two mash bills (particularly our wheated recipe). The result is a blend that ‘lives’ on the lighter side of the  flavor spectrum but still carries plenty of depth and complexity." - Grant McCracken, Founding Distiller. 

Together, the Spring 2021 Vintage contains three unique mash bills – 50% of which comes from their fan-favorite  wheated mash bill. Made in two batches of ten barrels each, this vintage now becomes the distillery’s most limited  Bottled in Bond release since it began four years ago, offering notes of butterscotch candy, cream soda, fresh  plum, and lemon curd. 

Chattanooga Whiskey Bottled in Bond Vintage Series: Spring 2021
will be available at the Chattanooga  Whiskey Experimental Distillery beginning May 9th, 2025, and on shelves in select states in the following weeks at $52.99 for a 750ml bottle. Limited quantities will also be available online at Seelbachs.com for shipping to select states.
