Pursuit United Bourbon is produced by Pursuit Spirits, whose two co-founders got their start in the world of American whiskey as part of the podcast team at Bourbon Pursuit. The brand has stuck with the same three sources for their bourbon as they continue to hone their blending skills. Of particular note is that while the source of the Tennessee whiskey is not revealed, they specifically point out that it is not from Tullahoma, home of the George Dickel brand. This release also embodies a new look, as the company states it is a “comprehensive packaging refresh featuring a distinctive custom bottle and updated labels across the entire Pursuit United line, designed to enhance shelf presence and clarify product identity.”

The addition of barrel proof bourbon now allows the company to target three distinct proof points. This includes a lower 88 proof bourbon and a mid-range 108 proof bourbon, with a $20 price difference between each level. Thanks to this Goldilocks-style product line, there’s something for everyone depending on price point and taste preference.

Pursuit Spirits’ highest proof bourbon offering is classic in nature. It starts with a pleasing aroma of charred oak, fresh bread, and faint caramelized nuts with a passing dab of ethanol that reveals its proof. The midpoint is the star of the show, leaning into spiced honey along with a mix of various spices that rest on a peppery oak base. The finish contains classic bourbon notes with a focus on heavy charred oak, leather tobacco, black peppercorn spice, and baking spices, along with a light dollop of honey to add sweetness. Overall, Pursuit United’s Barrel Proof Bourbon is a pleasing pour that highlights both its rye and wheated components nicely, showcasing a range of classic bourbon notes.
