By using two new mashbills in the blend for its Fall 2022 Vintage Bottled in Bond Whiskey, Chattanooga Whiskey Co. shows that experimentation is often worth the risk.
Chattanooga’s Bottled in Bond series is a semi-annual release, with each highlighting the spring or fall distillation seasons. These vintages are crafted using a wide selection of unique mashbills and contain a high percentage of malted grains, including at least 25% specialty malted grains. Batch sizes are small, with only 10-12 barrels per batch, and the Fall 2022 Vintage is aged in both toasted and charred oak.
Notably, the Fall 2022 Vintage uses two new mashbills for the series: Barrel 54 and Barrel 177. Both use unique grains; however, Barrel 54 takes things even a step further. "The Barrel 54 recipe passes every legal test for a bourbon, but its mash bill is very unconventional – not only which grains are used, but the textural characteristics they bring to the whiskey. We originally named it 'second cousin' as an analogy, because it's clearly related to what we do…but not directly. A recipe like this isn't showing up at every family reunion, but things get interesting when it does," states Grant McCracken, Founding Distiller.
The latest edition of the company’s bottled in bond series starts off with a unique aroma. It delivers sweet notes of nougat and light marshmallow, along with intriguing holiday spices and a light, earthy scent reminiscent of an amburana finished whiskey. The midpoint is pleasing, but the more grounded and spice-filled flavors come across lighter overall and sit on a thin mouthfeel. These spice notes carry into the shorter finish, which combine with drier notes of oatmeal bar and oak, along with a dab of sweetness to round things out.
The most interesting part of Chattanooga’s Bottled in Bond series is how different yet similar each release is. While the Fall 2022 Vintage adds two unique mashbills to the mix, Chattanooga Whiskey’s undeniable undertone runs through it all. The nose in particular is intriguing, and while the sip has its hiccups at points, notably the thinner mouthfeel and shorter finish, it’s a good example that highlights the innovation that Chattanooga is willing to take with each release in the series.
