Starlight Honey Reserve Bourbon is a honey-forward honey-finished bourbon at a good price point.
Starlight Distillery located in Borden, Indiana calls Huber’s Orchard & Winery home. The farm started in 1843 when Simon Huber settled it, and is now in the 7th generation of Hubers living and working on the farm. Along with growing various crops, the distillery also has bee hives which they utilize to produce their own honey. This whiskey was made by aging the bourbon in used bourbon barrels that previously held honey produced on their farm. It’s a limited edition whiskey, and follows previous batches of the same format.
Honey finished bourbons are still very limited in nature, though the style continues to gain popularity as an increasing number have been released. Starlight isn’t bashful about finished whiskeys, and their appetite for experimentation in that area has led to an expanding number of fun releases. Doubling down on the honey finish, their latest edition is honey-forward with beeswax right upfront on the nose, along with honey, buttercream frosting, and brown sugar flavors throughout, all evoking the sweet honey driven flavors. Being a fan of honey finished whiskeys, I really enjoy the honey-forward nature of this whiskey. Where it lacks is its level of complexity, falling a bit short on more developed underlying bourbon notes. Overall it’s a really good option for whiskey drinkers seeking intense honey finishing at an affordable price point.
