Jimmy Red Bourbon Finished in Peach Brandy Casks is a 90 proof, 100% Jimmy Red corn bourbon from High Wire Distilling Co. that offers a balanced and subtly sweet peach-forward profile.

High Wire Distilling is located in Charleston, South Carolina. Founded by husband and wife team Scott Blackwell and Ann Marshall, High Wire Distilling makes small batch spirits distilled in a hand-hammered, German copper still. The company’s flagship product is Jimmy Red, made from 100% Jimmy Red corn sourced from Turnbridge Farm in Darlington, South Carolina. A rare heirloom, Jimmy Red corn is a “varietal that the brand has worked tirelessly to bring back from the brink of extinction."

Jimmy Red Bourbon Finished in Peach Brandy Casks features peach notes throughout its sip, and while this is to be expected, it’s surprising how restrained they are. This isn’t High Wire’s version of Barrell’s Seagrass, but a subtle enhancement of many of the flavors already found in their Jimmy Red Bottled in Bond Bourbon. Some of the boldness of their bottled in bond product is reduced, and an extra degree of sweetness is added. The combination of grilled peaches, brown sugar, bubble gum, strawberry, raspberry, fig paste, fried dough, and toasted oak results in a delicious pour. The Jimmy Red Corn boldness can still be picked out and works well against the newly injected sweetness. The whiskey is great as-is, and I would love to see a higher proof version.
