Straightforward and to the point, Hirsch the Bivouac delivers an easy drinking sip at the expense of providing any real depth.

Hirsch The Bivouac is a batched product that the brand says will be composed of approximately 160 barrels per batch. Unlike Hirsch The Horizon, which is the company’s other batched bourbon and is a blend of bourbons distilled in Indiana, Hirsch The Bivouac combines two Kentucky bourbons. The company states that “The Bivouac, pronounced ‘be∙voo∙ak,’ refers to a temporary camp without a tent or cover. It alludes to a way of travel only meant for those who want to truly immerse themselves in nature. HIRSCH The Bivouac honors those adventurous spirits who are brave enough to take the road less traveled.”

While Hirsch the Bivouac and Hirsch The Horizon don’t share the same mashbill makeup, they do share one thing in common. Both deliver a straightforward sip. Even with its 100 proof makeup, Hirsch the Bivouac plays it on the safer side, focusing on a common thread of light vanilla, oak, and spice with interwoven notes of summer fruits and peaches. It’s lighter in nature, never diving too deep into any one tasting note, which can most likely be attributed to the large percentage of 3 year old bourbon in its makeup. While incredibly easy to drink, I would like to see future batches of Hirsh the Bivouac add more depth to its sip.
