Adding honey directly to bourbon aging in barrels results in a very honey-focused pour for Green River’s new Honey Finished Bourbon.
While many distilleries have gone down the honey barrel finishing path, fewer have chosen the road that Green River did for their Honey Finished Bourbon release. To create Green River Honey Finished Bourbon, the distillery added a custom blend of locally sourced, seasonally selected 100% real honey. Notably, the bottle contains instructions that bourbon drinkers may not be used to seeing: “shake well.” This is because the distillery added real honey directly into the barrel to create this bourbon, so consumers may notice some separation in their bottles if they let them sit for a long time.
It should come as no surprise that a bourbon that is directly infused with honey while still in the barrel produces a honey-forward pour. In the case of Green River Honey Finished Bourbon, the resulting bourbon is so honey-forward that there is no doubt what the company was trying to accomplish. The nose is the most balanced of the sip, inasmuch as it allows other scents to shine and be in balance with the honey. The palate and finish, however, are dominated by honey, as the flavor note easily pushes aside any other flavor that tries to step into the spotlight.
Compared to Wild Turkey American Honey or Evan Williams Honey, it’s clear that Green River was trying to appeal more to traditional bourbon drinkers by bottling at 92 proof and using 100% real honey, versus consumers looking for a lower proof liqueur. Additionally, the extra proof and usage of real honey directly added to the bourbon plays out well in cocktails, which is ultimately what this bottle is best used for. At a very reasonable $25, consumers looking for a honey-focused bourbon for a cocktail will have no problem using this. For anyone looking to solely drink it neat, be aware that you have to really like honey, as Green River Honey Finished Bourbon is incredibly focused on that flavor note.
