Now 8 years old and available in small batch form, Fireside 8 Year Straight Bourbon Batch 1 brings the brand’s signature chocolate malt profile and more developed sip.
Mile High Spirits is based in Denver, Colorado, and was founded in 2011 by Wyn Ferrell, Joe Von Feldt, and Chase Campbell, drawing on their beverage industry and private-label spirits experience, and in 2014, opened their distillery. Many of their whiskeys use a unique blend of grains, elevating them from just another craft whiskey to something much more memorable and distinctive.
Having steadily aged their whiskey for years, Mile High Spirits is now reaping rewards. They gave everyone a sneak peek last year of their 8 year bourbon in single barrel, HAZMAT proof, which proved to be hard to tame. With more 8 year stock ready to go, they are releasing their first small batch, proofed to 105.6.
Fireside 8 Year Straight Bourbon starts with what can be expected from Mile High Spirits: a delicious smelling aroma. Big wafts of caramel and brown sugar combine with root beer candy, chocolate mousse, and toasted cinnamon to great effect. The palate layers in chocolate thanks to chocolate graham cracker and baking chocolate. Chocolate malt typically plays a role in Mile High Spirits’ bourbons thanks to its inclusion in its mashbill, and once again, chocolate malt balls lead. Though not dominating over finer notes of malt, rye spice, toasted nuts, and amaretto, it makes it able to hit its mark even at 105 proof.
Now in batch form at 8 years old, Mile High Spirits bourbon continues to develop its flavor profile. Many of the brand’s unique flavors that have been present from their early days are thankfully still present, and a better well-roundedness has developed. Though I found fault with their HAZMAT single barrel, with its excess of dry seasoned oak, that isn't the case with batch 1. At 8 years old, Fireside bourbon continues to be a flavorful pour thanks to its range of complementary chocolate and oak flavors that have become a hallmark of the brand.
