Widow Jane Distillery
RED HOOK, BROOKLYN, NY (SEPTEMBER 29, 2025) - Brooklyn’s Widow Jane Distillery, led by Head Distiller Sienna Jevremov and the blending team, today announces the seventh edition of The Vaults, its annual, limited release of the old and rare bourbon from the distillery’s reserves that has been finished in casks made from unique and elevated woods. The Vaults 2025 limited edition is aged a minimum of 15 years, finished in Mythological Oak, and will be available for a retail price of $249.99.
This year’s finishing casks are made from oak harvested from the ancient forests surrounding Amfilochia, a mountainous city on the Mediterranean coast of Greece. Oak trees in the region are also prone to lightning strikes, adding a layer of mythology and, perhaps, a celestial char to the wood foreshadowing their future as whiskey barrels. These storied trees, rooted in myth and reverence, now lend their timeless character to this exceptional whiskey from Widow Jane. The wood used in barrel assembly is air-seasoned for 1-2 years and imparts notes of wild honey, mountain sage, and dried fig, enriching The Vaults’ intensity, structure and length.
Tasting notes: Rich, dark mulled fruit, burnt sugar, salty olive oil pastries, and forest aromatics lead The Vaults 2025 taste experience, which is rounded out by complementary floral and citrus notes.
“Each edition of The Vaults is a thrilling experience for me,” said Jevremov. “It affords me the opportunity to explore the enigmatic flavors of our older whiskey stocks and to craft a composition woven together into something entirely new. For 2025, I chose Greek oak as the finishing wood having been inspired by my many journeys to the region. Walking among its landscapes, the aromas have lingered with me ever since—haunting me in the most delightful way.”
Added Widow Jane Vice President Michele Clark, “This year, we turned to mythological oak, a gift from one of the world’s most fertile and storied landscapes. Nurtured by the Mediterranean sun and sea, these ancient oaks embody the essence of their terroir. In choosing them, we sought not only to honor tradition but to forge new ground—creating a spirit of uncommon depth, layered with rare complexity, and worthy of its timeless origins.”
As is the case with all Widow Jane whiskeys, The Vaults 2025 is non-chill filtered and is proofed with limestone-rich water sourced from the legendary Rosendale Mines of upstate New York.

About Widow Jane Distillery
Widow Jane is an award-winning artisanal distillery located in the New York City neighborhood of Red Hook, Brooklyn. Our whiskeys have drawn acclaim from some of the most prestigious names in the industry, including Whiskies of the World, the San Francisco Spirits Competition, World Whiskey Awards, and the Icons of Whiskey Awards.
The company is named in homage to one of the legendary mines of Rosendale in Upstate New York, from which the brand sources its proofing water. Before becoming a natural reserve of extraordinary mineral water, the mines produced the natural cement used to construct some of the most iconic American landmarks, such as the Brooklyn Bridge and the Empire State Building, among others. The pure, limestone-filtered water from the mine, plus one of the country’s largest holdings of long-aged Bourbons, and a refusal to compromise the product with chill-filtration, are just three elements that make Widow Jane a stand-out whiskey company.
The facility in Red Hook includes mashing, fermentation, distillation, barreling, aging, blending, warehousing and bottling. Widow Jane Distillery is also open for tours and tastings. For more information, visit www.widowjane.com or find Widow Jane on Instagram @widowjane.
