Chattanooga Whiskey
Chattanooga, TN (November 2026) – Chattanooga Whiskey has announced the release of The Confluence Project: Volume 2, the next chapter in its ongoing collaboration with New Riff Distilling. Released through the distillery’s Experimental Single Barrel Series, Volume 2 features 12 cask-strength single barrels of the same Tennessee Straight Wheat Whiskey as last year’s Volume 1, now aged for seven years and six months.
Last fall, the two distilleries introduced The Confluence Project with a simple premise: agree on one mash bill, then let each team make the whiskey its own way. Volume 2 picks up where Volume 1 left off: the same whiskey from the same distillation runs, now with an additional year in the barrel - giving drinkers a chance to taste how that original idea has matured.
“Volume 1 was all about seeing how each of our distilleries approached the same whiskey. Volume 2 is about what an extra year does to them.” - Grant McCracken, Founding Distiller
This year, each distillery is presenting its share of the whiskey in its own way. New Riff Distilling is releasing its Volume 2 in a mix pack, while Chattanooga Whiskey is continuing the format it introduced last year: a rolling, barrel-by-barrel release of individual single barrels.
Volume 2 begins with the same mash bill both distilleries agreed on for the inaugural release: 60% Red Turkey Wheat, 24% Appalachian Malted Wheat from Riverbend Malt House, 8% Dark Malted Wheat, and 8% Caramel Malted Wheat. Chattanooga Whiskey fermented the mash for seven days under temperature control, distilled it to 132 proof, and filled it into a range of toasted and charred casks at entry proofs of 110, 115, and 120.
No two barrels in the collection were built quite the same. Some feature staves seasoned outdoors for 18 months, others carry the distillery’s custom toast, and char levels range from a light #1 to a heavy #4, with several barrels combining all three. Finally, every barrel was bottled unfiltered at cask strength, exactly as it came out of the wood. Flavor profiles within the collection range from custard-filled donut, crème brûlée, and caramel shortbread to cherry tart, candied walnut, and gingerbread, with a long, malty-sweet finish.
“Once you’ve locked in the mash bill and the distillation, the barrel becomes the most interesting variable left. Spreading this whiskey across different entry proofs and cask types lets people taste how much those choices matter, even with a spirit that started out exactly the same.” - Grant McCracken, Founding Distiller
As with Volume 1, the release is designed as a rolling, barrel-by-barrel offering. The first single barrels will be available at the Chattanooga Whiskey Experimental Distillery beginning Thursday, November 5th for $69.99 (750ml). As each barrel sells out, the next will take its place until all 12 are gone.
For the full experience, the distillery encourages fans to taste the Chattanooga and New Riff expressions side by side, or better yet, to visit both distilleries in Chattanooga, TN, and Newport, KY.
About Chattanooga Whiskey:
Founded in 2011, Chattanooga Whiskey fought to change Tennessee law – winning the right to distill whiskey in Chattanooga for the first time in over a century. That bold beginning laid the foundation for everything that followed, including the creation of the Chattanooga Whiskey Experimental Distillery and the invention of their distinctive Tennessee High Malt style. To scale their most successful Experimental recipes, the company later opened their Riverfront Distillery, which transformed small-batch innovation into nationally recognized core expressions.
Since then, Chattanooga Whiskey has grown into one of the most innovative craft distilleries in the country and was just named Craft Producer of the Year for 2026 by Whisky Magazine's Icons of Whisky. Today, the Experimental Distillery continues to push the boundaries of craft whiskey, introducing more than 50,000 visitors annually to Chattanooga Whiskey’s now iconic story.
