Distillery 291 Announces New Maple Syrup Barrel-Finished Whiskey

(Colorado Springs, CO) December 2020 - Distillery 291 is introducing 291 “M” Colorado Whiskey, a new whiskey made with 291’s flagship rye that is finished in whiskey barrels that have been used to age maple syrup. Just in time for the holidays, the “M” Colorado Whiskey will be available on December 5, 2020, at Distillery 291’s Tasting Room (1647 S Tejon St, Colorado Springs, CO 80905) and select Colorado retailers. This is the first new label introduced by 291 in five years.

“In the past, after aging our whiskey, we would sell our barrels to a maple syrup producer in Wisconsin for their own barrel-aged maple syrup production,” said Michael Myers, 291’s Founding Distiller and CEO. “This time they sent some of our barrels back so we decided to age our Colorado rye whiskey for an additional four months in the maple-finished barrels. We think the results are special and this whiskey definitely put us in a holiday mood!”

291 “M” Colorado Whiskey starts as 291 Colorado Rye Whiskey, which is aged in new American White Oak barrels and finished with Aspen staves. The whiskey is then transferred to barrels previously used to barrel-age Wisconsin maple syrup by producer Lincoln County Reserve Maple Syrup and then finished for four months. The result is a whiskey with notes of toasted oak, toffee, maple syrup, and figs. This rich, spicy, and viscous whiskey is like liquid french toast with a serious kick. “M” Colorado Whiskey is presented at 123.4 proof for an MSRP of $104.99. 866 bottles have been made available for the new release.
